After cat went nostalgic over my basic brownie recipe, I became determined to find the brownie of her youth. I knew it was a recipe similar to mine, but with a few alterations. I searched high and low looking for a brownie recipe that required an 8X8 inch pan and loaded with walnuts. I found the recipe in Parade Magazine! Eureka! I just knew I had struck gold.

Cat asked me to post this recipe on the forums and tell everyone she wants a batch whenever someone visits her. Without further adieu, here is the receipe.

Fudgy Brownies
Ingredients

• 5 TBSP unsalted butter (1/3 of a cup)
  4 oz. semi-sweet chocolate, finely chopped
  2 oz. unsweetened chocolate, finely chopped
  3/4 cup sugar
  1/4 tsp salt
  2 large eggs
  1/3 cup all-purpose flour
  1 cup walnuts

Directions
Preheat oven to 325F. Line an 8x8 inch baking pan with nonstick, or buttered aluminum foil

Put a metal bowl (double boiler) over a pan of simmering water and melt butter and chocolate until smooth. Remove bowl of chocolate and whisk in sugar, and salt. Whisk in the eggs one by one, stirring until mixture is smooth. Add the flour and stir gently until combined. Fold in walnuts.

Bake the brownies for 30 to 33 minutes, or until the top is dull and knife inserted into the center comes out clean. Do not overbake! When the brownies are cool, peel away the foil and cut into 16 small squares.

Now I have 2 new chocolate recipes to contemplate for Lover's Day!

I am leaning toward those brownies. With only 1/3 cup flour and all that chocolate, they are going to be something else.

That brings back some good memories. I found a recipe like that in Bon Appetite and pastry textbooks a few times, but the instructions were a bit different, since you beat the eggs, sugar, salt and vanilla together first and then add the remaining ingredients to it. I can't eat anything with wheat anymore, but because of the high egg and fat content it isn't hard to make a gluten-free version of that type of brownie, thank goodness.

The chocolate delights in this topic look divine. I'll have to try making them sometime in the near future.
